Turkey Bacon Egg Cups

Ingredients

20 eggs, lightly scrambled

10 slices Maple Leaf Natural Turkey Bacon, sliced in half lengthwise

½ cup (125 mL) cheddar cheese, shredded

Salt & pepper, to taste

Copped chives for garnish, if desired

Directions

Preheat oven to 350 degrees.

In a large bowl, combine your eggs and cheese. Whisk until combined.

Spray muffin cups with cooking spray.

Line each muffin cup with a half slice of the turkey bacon going around the sides of the cup and not the bottom. Using a ladle, fill each cup ¾ the way full with egg mixture.

Sprinkle with chopped chives and more cheddar cheese, if desired.

Bake for about 16-18 minutes or until the eggs are cooked through.
