Cauliflower and Ham Croquettes

Ingredients

3 1/3 cups (340 g) crumbled cauliflower

1/4 cup (60 mL) herb and garlic cream cheese

1 cup (250 mL) Maple Leaf Original Natural Smoked Ham

1 tbsp (15 mL) finely chopped parsley

1/2 tsp (2 mL) salt

1/4 tsp (1 mL) pepper

1 egg, lightly beaten

6 tbsp (90 mL) all purpose flour

1 cup (250 mL) Italian bread crumbs

Ranch dressing for dipping, optional

Directions

Preheat oven to 400°F. Line a baking sheet with parchment.

Place cauliflower in a medium pot with 2 cups water. Bring to a boil. Reduce heat to medium, cook until tender, 3 to 5 minutes. Drain cauliflower and squeeze out any excess liquid.

Stir cauliflower with cream cheese in a large bowl.

Add ham, parsley, salt, pepper and egg to cauliflower mixture. Stir in flour until mixture holds when formed into a ball.

Press mixture into balls by the scant 3 tablespoonfuls. Roll in breadcrumbs and shape in to ovals. Place on prepared baking sheet.

Bake until golden and firm, about 15 minutes. Serve alongside ranch dressing, if using, or dip of choice.

Tip: Serve croquettes as a snack with cut vegetables and your favourite dip.
