Creamy Bacon and Cabbage Soup

Ingredients

1 pkg Maple Leaf® Original Natural Bacon, diced — save ¼ of the pack for garnish

1 540 ml can cannellini bean, drained and rinsed

1 small onion, small dice

1 tbsp garlic, minced

5 cups (1.25 L) reduced sodium chicken broth, reserving ½ cup

4 cups cabbage, diced

1 cup sour cream

Salt

Pepper

Old cheddar cheese, grated

Directions

Heat a large pot or a dutch oven over medium high heat.

Cook bacon stirring frequently until just starting to crisp. Drain all but 1 tbsp of the bacon rendering from pot.

Add onions and stir until onions turn translucent, about 3 to 4 minutes. Add garlic and stir 1 minute more.

Stir in cabbage and cook for another 3 to 4 minutes or until cabbage is starting to wilt. Add chicken broth and stir well to combine. Let simmer.

Puree beans with reserved chicken broth and sour cream with the high setting on a blender.

Whisk mixture into broth until fully combined.

Season with salt and pepper. Garnish with cheese and diced bacon.

Tip: Double the batch and freeze for cold winter days!
