Creamy Easy Cajun Chicken Pasta


4 Maple Leaf Prime® Raised without Antibiotics Boneless Skinless Chicken Breasts

1 2/3 cup cream

3 tbsp Cajun seasoning, prepared

1 255g pkg cherry tomatoes, quartered and divided

454g dry rigatoni or any short pasta, cooked and drained

¾ parmesan cheese, finely grated

3 heaping tbsp parsley, minced

2 tbsp + 1 tbsp vegetable oil

1 tbsp butter

Green onions – finely diced, optional


1. Place chicken in a large bowl and drizzle with 2 tbsp of olive oil and sprinkle with Cajun seasoning.

2. Massage seasoning into chicken to coat well.

3. Heat remaining tbsp of oil and butter over medium high heat in a large nonstick skillet.

4. Cook chicken 7 – 8 minutes per side turning heat down to medium after turning chicken. Chicken should appear slightly blackened. Cook until an internal temperature of 165 degrees is reached.

5. Remove chicken to platter and cover tightly with tin foil.

6. Add half the cherry tomatoes to skillet and cook for about a minute.

7. Add cream and stir to combine. Allow cream to simmer about 2 to 3 minutes to thicken slightly.

8. Add in parmesan cheese and season with pepper. Stir continuously until cheese has melted into sauce. Season to taste with salt.

9. Add cooked pasta and parsley to skillet and toss well to combine. Allow pasta to warm through.

10. Portion pasta onto plates and serve with chicken thinly sliced on the bias.

11. Garnish with remaining half of cherry tomatoes and green onion if using. Serve immediately.

Tip: Round out your meal! Serve with garlic sticks and a side salad.
