Folded Omelette & Sausage Breakfast Sandwiches

Ingredients

8 eggs

2 tbsp (30 mL) milk

1/8 tsp (0.5 mL) salt

1/2 small red pepper, diced

1 green onion, finely chopped

6 Maple Leaf Natural Sausage Breakfast Patties

6 English muffins, toasted

Directions

Preheat oven to 375°F. Lightly grease a 9”x13” cake pan and line with parchment. Lightly grease parchment.

Whisk eggs with milk and salt in a medium bowl. Pour into prepared pan. Sprinkle with peppers and green onions.

Bake until eggs are firm and no longer jiggly in centre, 10 to 12 minutes.

Cut omelette in half widthwise and then into 3 equal strips lengthwise. Fold each in half to make a square.

Heat sausages according to package directions. Top each English muffin bottom with a folded omelette, sausage and muffin top.

Tip #1: Cooled and folded omelettes can be frozen and heated in the microwave later for a quick breakfast.

Tip #2: Customize omelettes by using your favourite mix of veggies.
