Maple Leaf® Natural Selections® Ham & Egg Cups

These cups can be made ahead and re-heated in the morning for a quick and easy breakfast. They also make a delicious lunch warm in a thermos or even cold.
Ingredients

10 large white eggs

10 slices of Maple Leaf® Natural Selections® Smoked Black Forest Ham

¾ cup cheddar cheese, pre-shredded

1 cup diced bell peppers

Nonstick spray for muffin tin

Directions

Preheat oven to 375 °F. Line a baking sheet with parchment paper.

Heat oil in a medium skillet over medium heat. Saute spinach until wilted, about 1 minute. Spread out in pan and pour over egg whites and season with salt and pepper. Stir to scramble. Cook eggs, stirring continuously, until the consistency of soft cheese curds, about 2 minutes. Remove pan from heat.

Divide cheese equally amongst tortillas placing it in the centre. Top with cooked egg mixture and back bacon.

Fold edges of each tortilla over filling in a circular motion 6 times to create a hexagon. Place seam side down on prepared baking sheet. Bake until golden, about 10 minutes
