Top Dogs Unfried Rice

Ingredients

3 cups chicken broth

2 tbsp sodium reduced soy sauce

2 cups long grain rice

1 large carrot, diced

3/4 cup sliced mushrooms

1 small red pepper, diced

1 cup Maple Leaf Natural Top Dogs™, sliced

2 eggs, scramble cooked

Directions

Stir broth with soy sauce in a large pot. Add rice to mixture and bring to a boil.

Reduce heat to low and simmer, covered, for 5 minutes.

Stir carrots, mushrooms, peppers, peas and top dogs into rice and continue cooking, covered, until liquid is absorbed, about 10 minutes.

Remove pot from heat and let sit, covered for 10 minutes.

Using a fork, fluff rice. Stir in scrambled eggs and serve.

Tip: Speed things up on those busy nights by replacing fresh prepped vegetables with 2 cups of your favourite frozen blend of veggies like a stir fry medley.
