White Bean and Ham Soup with Kale

Ingredients

1 tbsp (15 mL) olive oil

1 onion, diced

1 carrot, diced

1 stalk celery, diced

2 cloves garlic, minced

1 pkg Maple Leaf® Original Natural Smoked Ham, cut into 1” (2.5 cm) pieces

7 cups (1.75 L) reduced sodium chicken broth

1 can (19 oz) Cannellini beans or white kidney beans, rinsed and drained

1/2 tsp chopped fresh thyme or rosemary

Dash of hot sauce

Pepper to taste

2 cups chopped fresh kale leaves

Directions

Heat olive oil in a large pot over medium heat.

Add onion, carrot, and celery. Cook for 4-5 minutes.

Add garlic and ham and continue to cook for another 1-2 minutes.

Pour in broth, beans and herbs. Bring to a boil.

Reduce heat and simmer for 5 minutes. Season to taste with pepper.

Stir in kale and cook until wilted. Ladle soup into serving bowls.
