1 280g pkg Olivieri Cheese Skillet Gnocchi
4 pcs Maple Leaf Natural Bacon, cut into 1” pieces
1 cup fresh corn kernels
12 cherry tomatoes, halved
½ cup Italian parsley, roughly chopped
2 tbsp basil pesto
¼ cup parmesan cheese, grated
1 tbsp unsalted butter
1 tbsp olive oil
salt & pepper

Directions

  1. In a large non-stick pan on medium-high heat, cook bacon until crisp. Drain on paper towel and reserve.
  2. Wipe pan, return to heat. Add olive oil, then gnocchi (in a single layer) and cook, stirring frequently for 5 mins or until golden brown.
  3. Add butter, corn, shredded chicken, tomatoes & parsley and stir until warmed through. Add salt & pepper to taste.
  4. Spread a thin layer of pesto on a platter. Spoon gnocchi mixture onto pesto. Sprinkle with bacon & parmesan.
